Abstract: 

Agricultural and food waste pose major environmental, economic, and social challenges. This thesis investigates the extraction and purification of proteins and peptides from underutilised lentil and chickpea processing sidestreams using sustainable, scalable methods. These biomolecules were repurposed into high-value applications, including biodegradable protein-based films for food and cosmetic use, and as corrosion inhibitors. All processes were integrated into a biorefinery framework and evaluated techno-economically to assess the circular and sustainable utilisation of legume-derived waste
